Negramora PeitralunaRacemi "Pietraluna" '08 Negramaro del Salento, IGT, Puglia $12.99 - On the nose this wine exhibits warm, spicy, earthy, cooked ripe black fruit. To taste it offers round, spicy, tannic, nicely ripe fruit, and some earthy nuances with a fresh acidity. A well balanced wine with warm style and a fresh touch.

Food & Wine Pairing 101

Do you ever feel like finding the right wine for your meal is a mystery - a great secret kept only by the chosen few? Worry not and read on because its not that big a secret! Here are some basic tips to help navigate food and wine pairing:
 
- Match the weight / richness of the food and the body of the wine. Example: A hearty stew with a full bodied Cabernet; a rich lobster sauce with a full bodied, creamy-mouth feel Voignier or Chardonnay
 
Match the flavor intensity of the food to the wine's flavor intensity. Example: Spicy rubs on meats or in sauces pair well with spicy Syrahs, Shiraz, and French Cote du Rhone wines
 
Match acidic foods with acidic wines. Example: This is why your classic ragu sauce  pairs nicely with dry, acidic Chiantis from Italy. The dryness of these wines is balanced with natural acidity from the soil, grape(s), & winemaking style of the region(s)
 
-Match sweet foods with sweet wines.  Example: pair your rich chocolaty desserts with a Late Bottle Vintage Port, or your creme brulee with a Sauternes
 
-Pairing salty foods with fruity wines - Rieslings, California Sauvignon Blancs, or Pinot Grigio  are recommended whites because the tannins found in red wine clash with the salt creating a more bitter taste. However low tannin reds - Rose, Garnache /Grenache, Pinot Noir - can make for a refreshing pairing.
 
Remember that food and wine pairing is meant to be fun, so always keep a glass of wine handy whilst creating your next meal, and as the timeless and irreverent Julia Childs always said "Bon Appetite"!
